Cyllvaynne of EU server Burning Legion has written up a nice guide of the epic items available to casual level players, categorized by their difficulty to acquire.  If you're interested in epic items that don't require raiding, it may also be worth checking out our guide to epic crafting as well as this additional information on the dungeon 2 armor sets.  However, beyond the avenues discussed, I think that the newer 20-player dungeons provide some additional options for players with limited time to devote to large raid instances.  And even Onyxia and Molten Core have fallen to "casual" raiding guilds that only do a few short raids a week.  Of course, for those opposed to the concept of raiding, rather than the time investment, neither helps much.
