I think my favorite thing about playing a rogue is 'turning off' the damage that is put out. A lot of people debate different types of dps, but I think if whatever the mob is that you are fighting sways back and forth under cs/ks, never casts and dies without doing much damage... I've done my job. (now if just more bosses would do that...)
There's nothing so satisfying as interrupting spell after spell in pvp, too, while they are 'bleeding like a stuck pig' as said above...
Stepping away from my main to play another class for a while reminds me just how painful it is to have to rez often - I've gone so long without having to do so when soloing it feels odd to actually die... (and is why having vanish broken so long was just so painful to rogues, it changed their sense of self...)
