I'd like to see tailors, leather workers and armour smiths able to change item colours. For example, you make a piece of armour, be it cloth, leather, mail or plate and then you have some control over what colour that is by using dyes.

It would be ever better still if there was the option to change the colour of dropped loot.

Of course to do this the player would need say a skill of 300+ in that profession. A couple of times during the game I've picked up stuff or made something and thought, cool stats but the colour is all wrong with the rest of my gear! Why not give us the chance to change it?
