From the characters I've leveled:
Hunter > Mage > Priest (shadow) > Shaman (enhancement)

Hunters are definately WoW on easy mode for leveling and Shamans are a complete and royal pain, particularly at low levels.

Once shaman's get Shamanistic Rage, there is pretty much no down time, and leveling is a breeze.

Paladins get super easy to level mid-level as well as soon as they can switch from Ret to Prot.

Hunters get easy to level at 10.
