Grinding for any class boils down to this ratio: Damage / Damage taken. For mana classes, add Mana Used to damage taken.
What this means for Prot Warrior grinding: To maximize your grinding, you will want to up your dps while not sacrificing too much mitigation. The best way to do this is by equipping any tank gear that has SBV (shield block value) as a stat. (Not all tank gear has SBV, mind you.) For non-warriors, SBV increases the damage done by Shield Slam. For Prot warriors, Shield Slam is a huge chunk of total dps. Now that you have maximum Shield Slam dps gear on, you can fill the rest of the slots with pure dps gear. So you keep a large amount mitigation with the benefit of dps gear mixed into your farm set.
I experimented quite a bit to up the damage/damage taken ratio while farming. The SBV farm set is by far the best for a Prot warrior.
Notes:
Since these numbers are general units, combining mana used and damage taken works for the ratio comparisons. The only case where this may not be valid is where the class has a choice of incurring more damage taken / less mana used or vice versa.
