i had 5 lvl 300 fishermen in vanilla wow and a 6th who was at 225 with the quest done. i recently decided to see how well he could fish in outlands and lo and behold, with a +100 lure he's done quite well and is almost at 300 now.
in general, my recommendations when it comes to fishing is that you find something to go with your fishing -- music works for me, f.e. -- and that might help keep you from getting bored by it.
the other suggestion is to just take it easy -- you don't really get a prize for going from 1 to 375 in a day. for the most part i try to do 10-20 skillups in one setting and then do something else for a while. maybe i'll come back to do some more or maybe i'll comeback tomorrow. pacing yourself (imo) helps tremendously.
oh, and as to why fishing benefits healers more -- fishing supplies the food healers use, either the mp/5 food from the zangar sporefish or the +healing food from the golden darters. stuff like stam and agi food you can just hunt for, but healers gotta fish!
