In my experience at least, no one ever rolls on herbs gathered or ore mined in instances save those who can actually gather the materials. I know a lot of this wasn't possible pre-BC which led to the way it is today, but would it be crazy for an enchanter to not DE instance items for the benefit of the group if herbers and miners won't allow /rolls on what they collect in an instance as well?

This argument or question comes up a lot on forums and thankfully I've yet to be in a group with someone that thinks this way.
If you don't want to disenchant BoPs that drop then don't offer the service. If you would rather take your chances that you get to win the greed roll and DE the drop, then so be it. But being an enchanter does not give you the right to all the shards in an instance.
If no miners or herbalists are present no one gets the herbs and ore. If no enchanters are present the drops can still be sold for gold.

The difference is that without an enchanter along, the group could still collect the loot to sell at vendor. Disenchanting for your group is just a courtesy. If you don't want to disenchant for them, just don't mention that you're an enchanter and let them vendor whatever rolls they win.
If instead you mean to say that an enchanter should have free access to all of the un-needed loot in the instance to disenchant for their own profit, you're crazy. Prepare to get kicked out of groups with a viewpoint like that.

No no, I'm not saying that an enchanter should get all the un-needed gear by default. I'm just saying it's kind of a crummy situation where herbers and miners get their stuff without conflict. The situation I had in mind I suppose is that if you're in a group where a herber or miner is present and they won't /roll for stuff they collect, is it too much of a stretch for an enchanter to refuse to disenchant for the benefit of the group, so everyone would have to /roll on vendor trash.
Like has been mentioned though, I suppose it's just easier in the long run to not mention you're an enchanter.
