Regarding the 'stiffed over tips' thing, remember that World of Warcraft is worldwide, and tips are not a worldwide phenomena. Here in New Zealand, if you overpay with the expectation of the excess going to the waitstaff as a tip, they'll likely run after you to tell you that you've paid too much, or take it as an insult. (Waiters, etc, are all paid at least the standard minimum wage here, meaning that tips are unnecessary and, to some, insulting since they imply relying on charity from your customers to live.)
If you expect payment for your services, whether it be chanting tailoring or smithing, state up front that you have a minimum fee. Tips are not universal.
