I mean, might as well level them while your on their way, more than often its not like you need to really go out of your way to get some stuff if your a gatherer/crafter.

It's a simple fix really. If they start all DK's at 0 for their professions, just know which profession you're going to take before WoTLK releases and farm some mats. Going Inscription? Go farm a few stacks of each herb or buy stacks from the AH. Send them to your DK when you start him and hopefully (if you farmed/bought the right mats) you'll level it enough to catch up to your level.

I've seen this work once before when a few of my guildies rolled JC and farmed all the ore before BC's release, they did just fine with it.

Buck up Sally's, very few things in this game don't take excessive amounts of time.
