You will not _need_ + defense rating, While it may be better for you as far as the avoidance goes, a full PVP geared warrior should be able to effectively tank 10-man raids. Because the resilience will make you uncrittable, and crushing blows are no longer a problem.
Same goes with Paladins.

I could be mistaken, but I recall reading that resilience will only function in PvP settings, meaning that it won't be as useful in PvE as it currently is.

5.6% resilience makes you crit-immune, yes... but, 5.6% defense makes you crit-immune and adds 5.6% dodge, block, parry, and miss. That's 16.8% of hits that simply won't land, and another 5.6% of them that are reduced by your block (or talented 2x block) value.

The plan in wotlk is to make resilience only work in pvp, and NOT in pve. So yeah, you *will* need to get defense gear. Lots of it.

Meatshield and Tank are different concepts. You’ve got 4k DPS warlocks to fend off. You can lean on it as a start, but don’t abandon defense for resilience as a tanking stat. PvP gear also isn’t going to generate a satisfactory level of threat with gimped values elsewhere. Resilience is a narrow avenue for tanking, even with higher stam itemization. Parries resets your swing for a fast riposte attack, block value boosts threat through Shield Slam, and avoidance is going to reduce burst, parry gibs, and nasty debuffs from stacking to the ceiling making you easier to heal.

people that obviously do not play the Warrior, or paladin class should not be able to comment on what a warrior, or paladin will need stat wise for tanking.
stick to what you know best.. firing your huntard arrows.
