I'm 65 and doubt I will hit 70 by launch, is it okay to hit Northrend at 68, anyone know?

There's no level restriction on Northrend like there was with Outland. Just take the boat/zeppelin and you're in. If you're asking if you can handle it at 68, you can. Although the last 2 levels might leave you doing more grinding than questing to 80.
