Flavor.
As a result of these changes there is absolutely no practical reason (other than flavor) to choose anything other than a druid or paladin, since you are in effect getting three viable max level characters for the price of one.

You should pick a pure DPS class if you want to play a pure DPS class, simple as that. If being able to spec/gear for more than one roll is important to you - then roll a hybrid, thats why they are there! Switching roles isn't important for everyone; many people only play as DPS specs, even on hybrid classes.
