Personally I've found the changes great fun for all my current toons (Druid Tank, Prot Pally, BM Hunter and Fire Mage). The introduction of Glyphs and the new talents have made my tanking a lot easier and give more flexibility and getting healing from my alchemy and glyph is an unexpected but nice addition to the mage.Dual spec will also open up new roles for me and yes I do believe this will be switchable within an instance - at Blizzcon, the designers joked about the mage having a dual spec table to make up for their loss of unique catering - ok it was only a joke but everything else I've read points to it being usable in raids. From a guild point of view, the changes allow for a wider variety of classes being used in a raid, the dual spec will allow for changing strategies. I really think Blizzard is interested more in us saying these are the toons we have, so how do we do it with them, rather than cancelling because a particular class or spec is needed. It also means that there are a lot more solutions to a raid than the classic class-based ones and I look forward to seeing them.
