I'm having some fun going back and doing all the low level quests in the starting areas, half to raise up my rep levels, half to just be a completist... Is there any way to generate an in game checklist of quests? I assume that info is saved somewhere, as the game doesn't let you repeat quests once you've completed them. But is there a way of accessing it?

This is a really good question. I was also wondering about it pre-Wrath (Trying to get Loremaster of Kalimdor as Alliance) and looked around for any mods that would let me access that information, but couldn't find anything.

I'm interested in this as well. I know you can turn on the "show low level quests" tracker, but it would be nice to not have to fly around the entire zone to find them. A list would be great.

My suggestion would be to hit Wowhead or some other WoW site and sort the quests by zone and filter for Alliance (or Horde if you swing that way). Once you have a list of the quest givers in the zone you can visit them with the low-level quest tracker on to see which ones are left for you to do.

Would be nice if we could get this question in it's own thread, i'm very curious myself :)
Dalaran is definitely a bit more full of stuff, when i first ported there as a lvl 71 mage, only 2 other people, if that, were even in the city... and it took a LONG time for even the portal to happen, and what's with the wierd "can't move" thing happening a few seconds after i do finally port?

So you probably want a mod that keeps track of which quests you've done and which you have yet to complete in a specific zone, but for now you could always hit up wowwiki. Just type in the zone you want, and then look through its quest list and see if you've done them all.
Like here's the one for Borean Tundra:
http://www.wowwiki.com/Borean_Tundra_quests
Not as good a an in game list but I hope that helps :)

I'm very interested in this addon too.
I could eyeball every quest in every zone, but to be honest I don't recall doing a lot of this stuff. My toon is over 2 years old, with a whole lot of area covered in all that time. I'm about 20 quests short of Kalimdor, and I swear there is nothing available. I'm going to have to take time from being in northrend to rep grind Magram/Gelkis (I've already done one, I don't remember which) just to get like 7 of them.
Anyway it would just be helpful to find two or three NPC in the middle of nowhere with "kill 5 yetis" "kill 5 big yetis" "kill the boss yeti" "talk to chick in town" type quests.

That information is definitely stored somewhere, but not on the players' side. It's all kept on the servers.
And as of now, that data isn't available to the game clients (via add-on or otherwise).
