I want to be able to change my race for purely RP reasons.... I don;t like my draenei pally, I want a human one.

Put a limit on it: 2 race changes per character, or a cooldown like server transfers.

The big reason you can't change races is because not every race can be every class.

While I'd love to change into an Undead Shaman, that's just not possible.

Solid point, but they could give you the option based on available races, for example: Human Lock could change to Gnome, and only Gnome. Druids, Alliance Shamans and Horde Pallies, well good game. Heh, maybe they just don't want to listen to all the crying players who can't change races due to class restrictions?
