It is ironic that Blizzard wants groups to “bring the player, not the class”, then dumbs-down encounters so that classes with CC don’t have to have the skill to actually use their full range of abilities.
Personally, as a priest who’s been both shadow DPS and a healer, back-in-the-day (before Wrath) I found CC (mind control and shackle) to be a good and interesting challenge. Now the encounters are pretty much vanilla; all the same “tank charges in and DPS burns them down” (in order if someone bothers to mark). It’s about the same party coordination level to zerg Scholo with a party of 70-80 toons as to run a level-80 Wrath instance, which is kind of sad.
As a healer in Wrath I find the no-CC environment a taxing task. Best-case, the tank takes a ton of incoming damage (unless overgeared) since nothing is CC-ed. Worst-case, either the tank loses one or more mobs which quickly destroy a DPS, or AOE from multiple un-CC-ed mobs forces me to spam group heals.
