I think that combat rogues in particular benefit from being between 300-315. White damage is still significant for us, and I miss about 16% of the time with +hit at 250. While it's not realistic or useful to try to hit the white hit cap, I've seen plenty of theorycrafters who suggest getting at least 300 hit, and that seems to work best for me, as long as I'm not sacrificing too much in order to get that amount of +hit.
