What makes a game fun is interesting decisions. Having to remember to go buy 20 stacks of ammo each time I leave Dalaran isn't an interesting decision; it's dull, it's silly, and the loss of a bag space puts me at a disadvantage to everyone else to boot.
From the perspective of Wow as a game, only the choice of what ammo to buy is interesting, and Blizzard can certainly preserve that choice (even enhance it) in removing consumable ammo. Perhaps now we can have many choices of ammo (instead of two) for different situations and swap different types in as the situation demands.
