Engineering is still both the most profitable crafting profession (thanks to your mote extracter), and the crafting profession with the most personal benefit to the person who took it up, with or without ammunition (and, if you'll look, ammunition isn't leaving, it's just being changed from a consumable to gear).
Any problem you have with engineering can be applied to several other crafting professions that are ultimately in the same boat. When push comes to shove, the three options are to say that crafting in WoW is in a generally bad place, in a generally good place, or to bury your head in the sand and scream about your own pet profession irrelevantly.
This change will make crappy money sinks slightly crappier. Just like rogue blinding powder becoming a vended item hurt herbalists, once. Herbalists got over it, people will get over this too.
