I doubt that there will ever be a DPS shortage. As bchen mentioned, there will probably be a lot of PvE/PvP dual-speccing, even for many of the hybrid classes (I could easily see Paladins, for example, speccing PvE Ret/PvP Ret or PvE Ret/PvP Holy)
I can also see someone doing 2 DPS builds in certain classes. Like a druid who dual-specs Feral/Balance. Or a Death Knight who switches between, say, Blood DPS and Frost DPS depending on the nature of a boss fight.
I don't know about warriors, though. I don't know too much about the class, but as far as I know there isn't much of a difference between how Arms and Fury DPS when compared to Feral and Balance for druids, Fire and Arcane for mages, or Blood and Frost or Unholy for death knights. Whether you wield one 2-hander or two, being a warrior DPS is still all about physical damage. The only difference is how you would deal that physical damage.
