Because of diminishing returns, you'd almost always want to take a point of defense skill over a point of dodge or parry skill as it gives more overall avoidance, and spreads your avoidance between all 3 avoidance categories minimizing the effect of diminishing returns. That said, all of the high end avoidance gear in the game forces you into taking dodge and/or parry rating along with defense rating, so in theory it is better, but in practice it is impossible to focus on defense rating alone.
