Before I wrote six. Now I'm writing seven. And if you got the picture on six, you'll probably understand why Kara Thrace is the featured image for this article where I answer seven of your questions. And if you don't understand what I'm talking about, just know that my girlfriend bears a resemblance to Katie Sackhoff (beyond sharing the same first name), and that's worthy of a Queue introduction right there.And mark my words, she is somehow related to the seventh Cylon. Starbuck, not my girlfriend (although...).

"Heirlooms and similar items are listed as "Bind on Account." Now wouldn't this make more sense if these BoA items actually did what their tooltip lists, and let us trade these throughout entire accounts, not just one server? I'd love for my Death Knight on my friend's server to have Murky and the Big Blizzard Bear."
While you can't do that right now, Blizzard has not ruled out the possibility for future inter-server transfers. Don't expect it anytime soon though. And personally, I'd be surprised if we see it at all.

"Speaking of unfinished business, whatever happened to mount enchants?"
They're on the backburner. Every week or so a blue seems to make a comment on it, basically saying that there's nothing right now about mount enchants or trinkets, but that there could be in the future.

"Do you know if, along with hearthstone cooldowns being lowered to 30 min in the new patch, if the refer-a-friend Summon Friend cooldown will also be lowered to 30 min? This would only make sense, as Summon Friend is often used right after hearth, right?"
Nothing yet, but it wouldn't surprise me to see it changed. And it has "stealth change" written all over it.

"As a mage I have some questions about trinket timings. Does a trinket affect a spell that I have already cast but is still traveling to the boss? Ex. If I go through my 6 sec pyroblast cast time then pop my trinket as it's flying to the boss will it increase the spell power on my pyroblast? Also, does it affect DOTs after they've been cast on a target?"
No, to both questions. Think of a spell as a gift you give to someone. Once you give the gift, you can't change it anymore. And DOTs are kind of like a purity ring, once you give it to someone there's no stopping Grey's Anatomy.
Farthing asked...
"When I first started playing, my favorite weapons, and more rarely armor, all had fun procs or use effects). Why do so very few quest and dungeon rewards have effects like this in Burning Crusade and Wrath content?"
Since procs are in the end a random element, they can provide rather significant balance issues while leveling and, perhaps more importantly, cause a lot of confusion for newer players as they work on the leveling process. Save the more difficult concepts for the end game.

"Why are there no Gnome or Dwarf or Tauren Undead? Does the plague only work on people of a certain size?"
Because everyone hates Gnomes, Dwarves, and Taurens.

He DID use "Grey" instead of "Gray", therefore alluding to the dubious TV series whose name in turn is a pun on the textbook, rather than the textbook itself.

When I made the comment, it was spelled Gray's. I am aware of the existence of the show Grey's Anatomy (though I have never watched it), but when I saw it spelled with an a, I decided that I wanted to be a smartass.
It is a choice that I make every day.
Though I still have no idea what "there's no stopping Gray's/Grey's Anatomy" means, regardless of whether it's referring to a medical textbook or a TV show.

Any plans on BOP tanking items in the future? I have a main lvl 80warrior who has 2 gathering professions. My alt, a DK is stillchoosing his. I was planning taking BS and enchanting as his 2professions, but if there are any plans or enchants coming assoulbound I might aswell take them on my main instead. (Who is atank.) Any advice?

Well, I wouldn't worry about weapon enchants as a DK, since oft-times your runes are a far better choice. Between swordbreak/shatter, stoneskin gargoyle and maaaybe the spell one. You have ones most tanks would really like on THEIRS.
Additionally, the only 'self only' enchants I know of are the ring enchants.
Blacksmithing though, Definitely. the 2 extra self-only sockets I can see being real handy.

Any 2 non-gathering professions will give you significant advantage:
There are engineer gloves for tanking in 3.1 (although I like the pulling missle better).
JC allows for you to put Dragon's Eyes in for great great numbers
Tailoring has somewhat crappy enchants ATM, but the AP ones is good for DK's
The Blacksmithing sockets are usually the highest payoff
The LW furs have a nice tanking one.-
Inscription has a better shoulder enchant then anyone else.

There can certainly be Tauren, Gnome, and Dwarven Undead. See: Death Knights. You can also see an Undead/Leper Gnome in Undercity near the RAS.
The reason we don't see more of them is that the plague was specifically targeted to raise Humans. Non-Human undead would have been raised via alternate means, such as the Undead Trolls in Eastern Plaguelands who were raised by boar's meat specifically poisoned by a Lich, or Banshees such as Sylvanas, whom Arthas raised specifically as a "reward" for how much trouble they caused him in taking the Sunwell back in WC3.

Maybe I misread the question, but your answer seems to be contradictory to Farthings question. He asked why they arent any proc based weapons at the end game (bc and wrath) compared to vanilla. Your answer is to kept things simple by not having any proc based weapons while lvling, which is the exact opposite of reality. I dont know of any proc based weapons in wrath, but while lvling, every other blue dagger from dungeons seems to have a proc on it.

Will all fairness, this is a WoW blog, I shouldn't have to worry if details about a completely unrelated show are being given are spoilers or not. I didn't know about it, I'm still catching up, all I was asking was for them not to mention that kind of stuff on here, that's all. And I'm apparently not the only one that feels this way.
It was just out of courtesy I was asking this, that's all. I'm only just done with season one and I've enjoyed not knowing any details up till now.
So in the future, I would just appreciate it if you didn't do that kind of thing, that's all.
