I believe that this was their original idea for how you would get into the Scourge-related raid zone that eventually became Naxxramas. Rather than the Scourge raid being a floating Citadel, you'd go deeper into the city of Stratholme and beyond it, deeper into Scourge territory. That didn't happen, and instead Naxxramas was born.

We're probably seeing an evolution of the Plague in Wrath of the Lich King. The plague we're seeing in action in Northrend doesn't entirely match up with the one we saw in Warcraft III or was written in the old RPG books. Not only has the plague had to be changed a little to fit the greater story, but the Scourge certainly wouldn't be sitting still on this thing. Your secret weapon isn't so great if there's an entire group of very powerful people who are completely immune to it. You're going to try to find a workaround, and you're going to try to find it as quickly as possible.
Icecrown has made it very, very clear that they've found that workaround.

It's a quote appropriate to Thaddius's background, but there aren't any quests or anything of the sort that would point you toward rescuing him. Just flavor text from an NPC. If you have an Alliance character, go stand in Wintergarde Keep with Commander Eligor Dawnbringer for awhile. He tells you a little about each of the bosses in Naxxramas, including Thaddius.
Thaddius is stitched together from the women and children that were otherwise useless to the Scourge. They're the weak and innocent that couldn't make decent Death Knights or even Ghouls. They were just used as meat, and their souls are trapped within WoW's Frankenstein.

Is there any Lore Behind Chromie, the one from the bronze dragonflight who appears in Caverns of time and in wyrmcrest temple?

You can first run into her hiding out in Andorhal, where she is investigating Scourge attempts to alter the timeline. She later becomes pivotal to the 'Battle of Darrowshire' questline in Eastern Plaguelands, where she helps you (the player) to change history and alter the fate of the damned Joseph Redpath.

Personally Chromie is one of my favourite lore characters. I think she's awesome. She's also one of the few dragons who seem to genuinely care about what happens to members of the mortal races.

Chromie's just a bronze dragon who has taken the form of a female gnome. What's interesting is that her name, Chronormu, follows the male naming convention, so she could have an unusual name or her disguise could be of the opposite gender than her dragon form.
She first appears in the Western Plaguelands, in a time-shifted room in the middle of Andorhal, where she helps the player change the history of a fallen crusader to a more heroic ending.

many of them appear to be modeled after in-game races. I've noticed the various shapes of trolls, elves, and humans but not much of other species in my times at HoS and HoL
I noticed a raid zone up un Winterspring leading to no where. Looking it up online it was a guessed attempt at letting players into Mount Hyjal currently rather than CoT right? So I'm just wondering how much stuff like this is in Azeroth and why hasn't blizz gone back to ever do something about them either cleaning them up or creating something for them? A lot of wasted area's as Blizz continues to push newer content ie Northrend.

Except for AQ40, all 40 man raids in Vanilla WoW had two entrances- one outside and another in its related 5 man (or 10 for UBRS) instance.
Molten Core has an entrance in Blackrock Depths, Blackwing Lair's is in Upper Blackrock Spire, and the original Naxxramus had an entrance in Stratholme.
It's weird, I know. Blizzard did it for lore reasons.
