I'd love to see a Tauren based instance. Let's face it, Tauren lore isn't very expansive. There's a small handful of significant Tauren characters, but I don't find myself imagining many of them heroically charging into battle as much as I do the other races. I understand that Taurens are largely peaceful by nature, but Orcs were generally considered warmongering butchers and that image has largely been changed by Thrall.
I'd love to see Baine Bloodhoof pick up a large mace, put on some Plate armor and go kick some ass. He could prove himself a formidable force to be dealt with, and give the Tauren someone besides their elder and a traitorous witch someone of significance.
We got Xarantaur, who is an amazing character. Hell he's one of the original Tauren Druids and is over 1000 years old, but again, we don't really see him stomping ground.
A dungeon would be an excellent chance for some nice Tauren badasses to come out of the woodwork. And why not? Trolls(too many to name), Gnomes(Gnomeregan), Humans(a bit of a push, but the stockades and Dead Mines are some slight examples), Orcs(RFC, Hellfire Ramparts), Blood Elves(Sunwell, Magisters, the Tempest Keep to some degree), Draenei(Tempest Keep, again), the Undead(Stratholme somewhat, there are dozens of other instances and raids with undead but wouldn't quite say they fall under forsaken), Dwarves(Blackrock Depths) all have some dungeons. Seems largely like the two races with Druids seem a bit shafted.
A lot of digression there. TL:DR Tauren dungeons, yes.
