As an ex-engineer I was deeply disappointed with the profession in WotLK. It was one of the most expensive professions to level and I got to 450 pretty soon as guildies needed the epic guns (which seemed to be the only way to make any money with this profession).
There was some talk of major changes in 3.1 but I got impatient and dropped engineering for....you guessed it....jewelcrafting. Now I have a serious pvp and pve advantage and I can easily make money every day with the daily quest. I thought 3.1 changes would make me regret my decision to drop the profession...but I'm still very much happy with my choice to drop Engineering as a gimmicky, situtational "fun" profession for mostly casual players who don't worry too much about min/maxing their gear.
