People will find any reason to complain. The game isn't tailor-made to individual's desired level of difficulty. There are always going to be elite players who think everything is too easy and there will always be casual players who will experience the pinnacle of WoW difficulty as any given dungeon that any given geared player could wipe their ass with. Ulduar offers hard-mode boss battles. There will, inevitably, be those who have the best gear and spend most of their waking hours tuning themselves to be the best players they can be, who will *always* want more of a challenge than what is offered. At some point people have to realize that the more they play, the better they get and will eventually reach a level of expertise where nothing short of literally unkillable bosses will be satisfying to them. Point is, "difficulty" is an objective term and the longer you've been playing and honing your skills, the less you will see that which you define as a "challenge".
