I'm fairly new to fishing, too. I really started working on it about a month ago, and have been trying to get a few levels a week. I admit that in the beginning, I was working like a dog because I had been honored with the Kaluak and wanted that pole (It give underwater breathing!)
I think, though, that people will eventually get bored with it and quit. It really is a tough thing to level, even harder than (though not as expensive as) enchanting. Some of the dailies even give me a chance to get about 5 skill points while I'm at it (I'm 371 now).
I never thought I'd enjoy it, but I've been sharing the Magic Eaters and the Pygmy Elixir with friends and we're all having a good time with it. I got the Giant Sewer Rat last weekend. I don't have the crawdad, but don't really care for now. It will come I'm sure.
I'm not an angler in real life, and wouldn't be, but I am enjoying it in game.
