It's simple. Thrall has always had someone or something to moderate his harsher experiences. Varian hasn't.Both of their parents were killed...but Thrall was only a few weeks old at the time, sparing his having to live with such a gruesome memory.Both were taken into slavery...but Thrall had Taretha and the unnamned Sergeant trying to do the right thing and be frinds to him while Varian was thrown in a cage with his new pitmates.Both had to fight in the gladiator ring...but the lore has made it clear that the Alliance version was overall less bloodthirsty and cruel than the Horde's.Both escaped from captivity...and Thrall did it with Taretha's help. Varian did it with his pitmates'.Add in Varian's memory loss, Onyxia's antics, the loss of his closest friends and family (where Thrall still has Nazgrel and Drek'thar)...Is it really any surprise that Varian is angry and bitter where Thrall is somewhat more moderated? Although their expriences mirror each others' Thrall has simply been given more reason to trust and reconcile than Varian has.
