My Blood Elf rogue uses enchanting as a way of expressing her power over magical elements; she may not be able to burn down her enemies with shadows and magical fire, but by the Light, she's still a Sin'dorei, and she has a more delicate command over the fine edges of their birthright than those flashy mages will ever understand.

It just seemed to me that any Blood Elf would have some control over magic, no matter what they chose to be, so enchanting was a logical profession choice for her.
