Almost never a solid tank leaves a solid guild, due to RL or drama, and opens a spot for you. Generally, you'll have to go backwards in progression if you want to get a spot as a tank. I have to agree with the replies above, run as dps, let them know you're interested in tanking, have a tank set etc.
My guild recently promoted one of our alts to tank over his hunter dps. The reason: He worked hard at it. His tank gear was well progressed, the best craftables he could get, he pugged his arse off to get the gear to put him at a level with our existing tanks, even out-gearing 2 of them. He started at the bottom of the rung, tanking adds on boss fights, dual speccing into dps for single tank boss fights, 2 months later (about 6 months after his tank hit 80) he is leading one of our 10 man Ulduar groups as it's main tank and has a guaranteed spot in our 25's as 3rd tank, even tanking some 25 man Ulduar bosses.
It's a long, long journey, but if you want to tank, you have to go through it.
Or the easy way is to find a guild that's less progressed than you (if you're Naxx ready, they're doing Heroics, if you're Ulduar ready, they're doing Naxx etc.) and latch onto them.
Neither is what you want, you won't get what you want.
