The Lich king raises strong warriors and turns them into death knights. You died fighting, and the lich king, recognizing your prowess and capabilities would be wasted as a ghoul or other common lackey, rose you as a death knight. You later break free. Thats why the deathknights we see now are referred to as "Second Generation". Thats also why the newer ones have memories of their former life, like all undead, or rather, Forsaken do.
The Deathknights you are thinking, wanted to become what they did. Orc warlocks freely gave up their body to have their soul implanted in that of a knight. That ended up with a heavily armored, strong body, and all the dark knowledge that the warlock commands.
