You forgot to mention the most important part of phase 3. The adds will cast drain life on random party members that heals Yogg. These need to be interrupted. I chose to spec into 2/2 Throwing Specialization and just chain spam FoK during that phase to minimize the healing done to Yogg.
I don't know if you just failed to mention that part or if you've never done the fight, but that's a pretty big aspect to leave out.

We have a Warrior tanking the Immortals, and he typically handles the interrupts. You're right, interrupting their Drain Life is very important, and another area that Rogues can help in.
Also, their drain life spell only heals themselves: it's the "empowerment" that Yogg will imbue them with that can heal Yogg-Saron. If you'd done the fight, you'd be aware of that.
