Why isn't there an in-game functionality to keep track which mails you have sent out? Kinda like Inbox vs Sent Items in most email clients these days. I don't think it would be that hard to implement by Blizzard, and that would make catching hackers much easier. A lot of times, the stolen gold and items are mailed out to their characters and that makes tracking difficult because the GM has to go through the database of mails and restore the items.
