Well, it makes sense about opening up more races if you think about the kind of potential profit Blizzard - Activision will make for people who are like "OMG, I can be a cow paladin instead of a boring dwarf pally. I won't have to be stuck being a BE" for example. It gives more "customization" for those people who don't want to be a particular race.
Me, personally, I'm more annoyed that I already have my main server filled with alts who are already 70+. I like the changes to different classes - a gnome priest! - but sadly don't have any room for one.

I'm in the same boat as you. My main server is at the character limit with all 10 leveled up above 60, which is above my "delete and reroll" threshold.
I'm hopeful that concurrent with the expansion of the race/class combinations, Blizzard will allow within faction race changes. I'd like to switch to switch my priest and paladin to Tauren, but those two toons being 80 and raid geared, I'm really not thrilled that my only option would be to delete them and reroll them up to 85.

I think more race/class combinations are good too, but I don't think some of them work as well. Like for Paladins, if they had announced Forsaken Paladins I would have thought that would be interesting, but the idea Tauren paladins just rubs me the wrong way. Personal preference I guess.
