Unlike druids (feral), shaman (enh) or pallies (ret), priests choose gear with int/spirit/spellpower on it while leveling. It's true that you'll see some boomkins and some ele shammies while leveling, but with priests it's a guaranteed "geared to heal", even if "willing to heal" is less assured.
It also sounds odd, but learning to heal while Shadow-spec'd has some advantages. You learn early on about the importance of mana management, you learn what to look for from a tank (especially multi-target threat) and you learn to heal without a real safety net. I wouldn't suggest heroics, but not-max-level regular instances are pretty easy to heal usually.
