One of the reasons that priests are asked to heal more often than other classes is that, either Shadow spec or Holy spec, they should be able to heal most low-level instances (just with water breaks after trash). Unlike druids (feral), shaman (enh) or pallies (ret), priests choose gear with int/spirit/spellpower on it while leveling. It's true that you'll see some boomkins and some ele shammies while leveling, but with priests it's a guaranteed "geared to heal", even if "willing to heal" is less assured. It also sounds odd, but learning to heal while Shadow-spec'd has some advantages. You learn early on about the importance of mana management, you learn what to look for from a tank (especially multi-target threat) and you learn to heal without a real safety net. I wouldn't suggest heroics, but not-max-level regular instances are pretty easy to heal usually.
