The tauren aren't rejecting the NElf teachings. They're saying "You have valid teachings. However, we believe you're missing something, based on our beliefs. We're missing the balance that we believe should and does exist", and lo and behold, apparently, at least for tauren, the Light Shines for them in multiple ways, from both the Sun and the Moon, providing them balance.
