From my personal experience: I wanted to hit 80 fast as possible (questing, not PvP). I didn't even bother with instances precisely because the gear would be outdated in just a few hours of leveling, especially in Old World with it's insane experience. I'm not saying I didn't go even if a friend or guildie invited me, I just didn't actively pursue it. You'll be perfectly fine 1-80 with quest rewards and drops, though once you hit Northrend, start paying close attention to the stats, you'll need them to break into end-game instances.
