There is a stealth opener over on wowwiki (I'm at work so not snagging it), but basically you press it once to go to stealth, press again to pick pockets and apply garrote.

so something like

#showtooltip Garrote
/cast stance [stealth] (or however that part goes, haven't played my rogue a lot lately)
/cast Pick Pocket
/cast Garrote
