I feel you on only having one 80. Just this week, after 2 years of playing, I have two characters level-capped at the same time. Oddly enough, my first level 80 was not my level 70 in BC. My main is now a Draenei Death Knight [insert Death Knoob comment here]. The idea of a Draenei falling into the Lich King's grasp was immediately an intriguing story line for me. Being of a race that is viewed as such a noble and honorable group within the lore, then becoming something so evil, and then having a chance to redeem himself by setting out to kill the Lich King makes him really fun to play... more so than it would have been for let's say... an Undead Death Knight
