It is -wonderfully- helpful to use the focus frame (or a raid frame's version) and a timer (such as ClassTimer or Elkano's BuffBars or what have you) to track the status of and the time remaining on your polymorph.
It also helps immensely to use a Polymorph macro (the macro below copied from WoWWiki)
#showtooltip Polymorph
/clearfocus [modifier:shift]
/focus [target=focus,noexists]; [target=focus,dead]
/clearfocus [target=focus,help]
/stopcasting
/cast [target=focus,exists,harm] Polymorph; Polymorph
I use a slightly different one, but I don't have it copied in mind (also use it for Shackle Undead on my priest, Turn Evil and Repentance on my Pally, etc.)
It will make the whole process of being awesome at not only blowing the hell out of things but keeping them docile until they're ready to die much, much easier.
