Wait... you can be flying with one character, logout and login with a different char, and the first character keeps flying? I've closed the game while flying before and seem to end up at the last flight master I passed before closing, but I've never tried logging on with a different toon.

If you log out while on a flight path, when you log back in you'll be at the same spot on the flightpath. You don't keep moving after you've logged out, barring some lag.

If you crash your game with Alt+F4 (Windows only, I assume this doesn't work with Macs. I suppose the key combo might work with a Windows emulator in Linux though) then your character will continue flying until he/she reaches the next Flight Path on the current route.That's the farthest you'll get though. This can be handy if you click the wrong FP and want to get off early. Way back when if you did this your character would just keep flying until they reached their destination, so you could use the method to switch toons if you wanted on a long FP. It no longer works that way though.
