First, as koknoka said, demand for herb should go up somewhat as people will now be able to make more flasks. But now is probably the time to start clearing out those herbs anyways, as they'll be worth much less when the expac comes out (assuming it has new stuff for you to herb).
When the new expac comes out, every single profession will have to adjust to a new tier and associated fluctuations. At least this way you don't have it come at the flick of a switch.
