Anduin would probably be a better diplomat than Varian, too. I'm not sure if the other Alliance leaders would accept him as de facto faction leader the way they seem to have rolled over for Varian, though - he's too young, especially from an elven or Draenei perspective.

And while I think Varian is a fool who needs anger management lessons, I'd rather it were him carrying around 1/5th of a Black War Bear for the Hordies than Anduin. Varian deserves a kick in the head now and then, Anduin doesn't. Plus he's in his early teens, how could he make a good raid boss?
