If you do a HotP out of battle, you'll see that the pet resses with a minimal amount of health, then immediately gains all their HP back. HotP appears to apply to separate effects: a Resurrection, followed by a full heal. I'm not sure if that's the actual process, or if it just takes the server a second to register the correct HP after a res.
Either way, if the pet dies, the mob should turn its attention to you, the hunter. In that case, just waiting a second to trigger HotP. You shouldn't have it on auto-cast anyway, as there are times it's better to let the pet die and cast Revive Pet yourself after dealing with the mob (especially if the mob is near death anyway). That way, you don't blow the cooldown when it's not necessary.
