I wonder: Do bands such as Dio, Iron Maiden and Led Zeppelin fall under the filking umbrella? Parenthetically, does merely having an umlaut in your band's name qualify you as a filker?

Not really. Songs like Metallica's "The Thing That Should Not Be," while referencing the fandoms, are not in the "folk" genre of music, so they don't really qualify. Johnathan Coulton, however, does.
For those interested in Filk, you can find some old archives of the original Filk lyrics, as stored back when BBSes were the internet, by doing a search for Filkfile. Warning, a lot of the lyrics, particularly for "That Old Old Time Religion," are very much NSFW!

As someone who is a fan of Filk music, I have been looking around for some WoW songs, and am glad that there are some out there.
onetrueping: The only reason why Filk is mostly folk-based is because it is easier to haul an acoustic guitar and other folk instruments to a con. Songs such as Bowie's "Space Oddity" fall under "Found Filk". Also, look at a band called "Toy Boat", who has done some rock versions of various filk songs, including the classic "Banned from Argo"
