Anything I deleted that I wish I hadn't? Not really. Yes, there are a lot of quest rewards or weird items like Vargoth's staff that I have deleted on my main, or completed and handed in the quest they were used for, and yes, when alts find stuff like that I hang on to them. But the difference between alts and mains is that my main has been around longer and needs more stuff. Maybe if a rogue was still my main I wouldn't have this problem, but my main is a balance druid who switches to resto fairly often and PvPs occasionally and still has a feral set hanging around out of habit. Then there's resistance gear. And then, I want to keep at least one complete set of each tier, just in case I ever want to play dress-up or do some old raid in appropriate gear or something. I only have so much space left for cool-looking gear, fun quest items, holiday rewards, etc. If it's a choice between Tier 2 shoulders (or, worse, Tier 6 shoulders) and Eranikus' essence, I'd vendor the trinket without a second thought. I remember being surprised to see people running around as furbolgs during BC raids and at the time I wished I hadn't completed that quest and handed the wand in, but I would have deleted it months ago to make room for something even cooler.
