I've always preferred less UI for tanking. Want to see as much of the environment as possible.

Exactly. Turn off all your addons except Omen and run some 5-mans I bet you won't miss 3/4 of the addons you have. The ones you do miss turn back on. Search a bunch of UIs for ideas and emulate that.
