This column is obviously aimed at very casual or non-raiders. If you raid you take two crafting professions because the innate buffs from the crafting professions are way better than the ones from gathering. Unless you're the type that enjoys having other people pull your weight.

Then, to pay the bills you can make an alt with two gathering professions.
