Mining and herbalism don't give you DPS boosts. Skinning's DPS boost is inferior to the crafting professions' boosts. The reason Blizz doesn't balance the underlying bonuses is for the reason given: you get gold from gathering (to buy better gear/gems/enchants), so you don't need as strong of an underlying bonus for the tradeskill.

As a result, having two crafting professions, even if it's not profitable or convenient, is superior in terms of the main purpose of a rogue: doing damage.
