Kael'thas, phases 4 and 5.

M'uru pre-nerf.

Kael was such a long fight and so straining and took soooo long to learn due to how each phase required more coordination and wipes, it remains, in my mind, the pinnacle of Blizz's boss fight development.

LK is probably top 3, as well, phase 2 took quite some time to get down.

But definitely Kael.
